These parcels of Chardonnay at the Tâcherons estate are up to fifty years of age. All of the fruit is hand-harvested, then gravity-fed into stainless steel. Cold settling of the juice at 10°C is done, without enzymes. Inoculation is done for fermentation in stainless steel tanks at around 14°C. Aged for roughly eight months on fine lees, filtered, and sulfured before bottling.
